SHEET-PAN EGGS IN SWEET POTATO HASH Mekdar

 

 

 

Ingredients and Preparation

  • 1 large sweet potato, cut into 1 cm (1/2-inch) cubes
  • 3 eggs
  • 1 small onion, diced 1 cm (1/2-inch) pieces
  • 1 teaspoon extra-virgin olive oil or sunflower oil
  • Salt (to desired taste)
  • some fresh chopped herbs, as basil, cilantro, or parsley
 

Cooking Instructions

  1. Preheat the oven to 220°C (425°F, or gas mark 7)
  2. Arrange the sweet potatoes and onion on a24 x 33-cm (9.5 x 13-inch) baking sheet in a single layer. (As the ingredients for this recipe don't take up much space, so this quarter pan is ideal.).
  3. Pour the oil over the vegetables. Stir everything together quickly. Spread it out evenly.
  4. Bake for 15 minutes. Remove from the oven and give it a good stir. Spread in an even layer once more.
  5. Make three small spaces for your eggs with a spatula. Fill each hole with one egg. Season the eggs with salt. Put in the oven for 5 to 8 minutes, or until the egg whites are set and the egg yolks are cooked to your liking.
  6. Before serving, remove from the oven and sprinkle with fresh herbs.
